Almost every day we bring in oysters from the oyster farms of Washington, Oregon, California and British Columbia and also from the east coast for the summer months. We then wet store the bags of oysters in Penn Cove or in our certified 3,000 gallon wet storage facility on shore, thereby allowing us to always keep the oysters in the best of conditions in cold water.  Wet storing the oysters preserves "Kissed by a Mermaid" freshness!

Fresh from the water instead of fresh out of the cooler makes all the difference when selling shellfish, especially for oysters meant to be served raw on the half shell. Water spilling from the shell and the fresh sea aroma as the oyster is shucked is a sure sign of freshness; it’s something you should expect!

FARMING OYSTERS 

Oysters have been farmed since Roman times and in many areas things are done much the same as they were back then, because they still work. However, there has been quite a leap in farming methods which has allowed oysters to be farmed in many areas much more efficiently or in areas where it wouldn’t have been possible before.
